Peanut Butter Cookie Bites

[free of: grain, soy, gluten, refined sugar, dairy, junk]


Ingredients:
+ 1/3 cup unsweetened peanut butter
+ 1/4 cup maple syrup
+ 1 tsp vanilla extract @simplyorganicfoods
+ 1/2 tsp coconut oil
+ Cinnamon
+ Mineral salt @redmondrealsalt
+ 3/4 cup almond flour @bobsredmill
+ 1/2 tsp baking powder

Makes 30 cookies (15 cookie sandwiches)

Instructions:
Preheat oven to 350Β°. Mix the peanut butter, maple syrup, vanilla extract and coconut oil together thoroughly. Mix in the cinnamon, salt, almond flour and baking powder.

Form into 1 tsp balls and place on a parchment lined baking sheet. Flatten with a fork making a criss-cross pattern on top of the cookie. Bake for 12 minutes and let cool. *Bonus: while baking the cookies, mix 1/4 cup peanut butter and ~1 tbs maple syrup together. Add this filling to one cookie and make a cookie sandwich!

You could easily make this a paleo recipe by using almond butter too! They’re DELISH!! I especially love them chilled and dipped in my homemade mocha lattes! YUM.
