GF Vegetable Ramen

Ingredients:

64oz Bone broth

2 Yellow onions, diced

5 Garlic cloves, minced

4 Celery stalks, diced

1 1/2 cups Carrots, diced

2 Zucchini, diced

1 Jalapeño, diced

GF ramen noodles (4 bricks of the Lotus Food brand- Costco)

1/2 tsp Curry powder

1/2 tsp Turmeric powder

1/2 tsp Ginger powder

1/2 tsp Onion powder

1/2 tsp Garlic powder

1/2 tsp Chives

1/2 tsp Sesame seeds

1/2 tsp Truffle salt

1/2 tsp Black pepper

Sesame oil

Coconut aminos

Olive oil

Instructions:

In a large soup pot sauté the onion, celery, garlic and carrots with a drizzle of olive oil until fragrant.

Add in the zucchini and jalapeño.

Add the spice mixture and stir.

Add the bone broth and bring to a low simmer.

In a separate pot bring water to a boil.

Add the ramen noodles and boil per directions on package.

Turn off heat.

Drain the water.

Add the ramen to the soup pot.

Turn off heat.

Serve topped with a dash of sesame oil and coconut aminos, chives and sesame seeds.
