Slow Cooked Pork Carnitas

Ingredients:

4.5 lbs boneless pork shoulder

1 tsp Cumin

2 tsp Chili powder

1/2 tsp Onion powder

1 tsp Garlic powder

1/2 tsp Black pepper

1 tsp Sea salt

(Alternatively use Siete’s mild taco seasoning mixture!)

3 tbs Butter

1 Lime

1/2 cup Water

Corn tortillas

Optional taco toppings:

Rice

Sour cream

Red onion

Pineapple

Jalapeños

Sautéed bell peppers

Shredded cheese

Lime juice

Cilantro

Instructions:

Prepare the spice mixture and place in a large bowl.

Slice the pork into large pieces.

Coat the pork in the spice mixture.

Melt ~2 tbs of better in a large skillet.

Brown the pork for 3-4 minutes per side.

Place pork in a slow cooker with 1/2 cup of water.

Cook for 4 hours on high.

Preheat the oven to 425° F.

Remove the pork from the slow cooker and place in a large pot or bowl. Save 1/4 cup of the juices and set aside.

Shred the pork with two large forks. (Alternatively use a hand mixer).

Add ~1 tbs of melted butter to a rimmed baking sheet.

Evenly spread the shredded pork to the pan and bake for about 15 minutes.

Broil for 2 minutes to crisp- be careful to not let it burn.

Transfer the pork to a serving dish, add lime juice and the slow cooker juices. Mix well.

Add the pork to tortillas with your favorite toppings. Enjoy!
