Cheesy Chicken + Corn

Ingredients:

3 Chicken breasts, shredded

1 Can organic corn

8oz Low fat cream cheese

1.5 cups Shredded Mexican cheese

I tbs Grass-fed butter

1 tsp Sea salt

1/2 tsp Black pepper

1/2 tsp Curry

1 tsp Garlic powder

1 tsp Onion powder

1/2 tsp Paprika

Dried parsley

Red pepper flakes

Instructions:

In a pressure cooker add 3 chicken breasts and 1/2 cup water. (For extra flavor cook the chicken with a small mixture of sea salt, curry powder, garlic powder and onion powder). Pressure cook for 25-30 minutes or until chicken is cooked through.

When finished, drain the liquid.

Using a hand mixer, shred the chicken in the pressure cooker.

Add cream cheese, butter, shredded cheese, corn and spice mixture. Using a spatula mix until everything is evenly incorporated.

Serve topped with paprika, dried parsley and black pepper. Enjoy it by itself, on tortilla chips or in a wrap!
