Instant Pot GF Mac and Cheese with Caramelized Onion and Corn
Ingredients:
1 package Tinkyada GF rotini pasta
3 tbs grass-fed butter
1 1/2 tsp Sea salt
5 cups filtered water
2 (large) yellow onions, diced
1 can organic corn
4 oz cream cheese
1/2 cup heavy cream
1 1/2 cup cheddar cheese, shredded
1 cup gouda cheese, shredded
1/2 tsp Smoked paprika
1/2 tsp Garlic powder
1/2 tsp Onion powder
1/2 tsp Dried parsley
1/2 tsp Red chili flakes
Black pepper
Butter
(Optionally add a cooked meat of choice)
Instructions:
Dice the onions and set aside.
In a large cast iron skillet add butter and diced onions- sauté until caramelized. Set aside.
In the Instant Pot add 5 cups of water, one package of GF pasta, butter and sea salt. Pressure cook for 4 minutes and carefully quick release when finished. Be sure drop chamber is attached to the back side of the Instant Pot to collect any excess liquid. (Cover lid of the Instant Pot during quick release with a cloth to avoid excess steam!)
Once the pasta is cooked, add the cream cheese and mix until combined.
Next add the heavy cream and shredded cheese and mix until fully incorporated.
Then add the spice mixture and mix.
Next add the caramelized onions and corn. Mix until fully incorporated.
Optionally add a meat of choice. (Sausage, chicken, etc)
Serve topped with dried parsley, black pepper and red chili flakes.
