Paleo Pesto Chicken + Spaghetti Squash Bake
Pesto:
+ 2/3 cup olive oil
+ 3 cups basil
+ 2 cups spinach
+ 1 cup walnuts
+ 2 tbs nutritional yeast @bragglivefoodproducts
+ 5 cloves garlic
+ mineral salt @redmondrealsalt
+ pepper
+ pulse in a food processor

+ 1 spaghetti squash roasted for 30 minutes at 425°. Cut in half and bake open side down with avocado oil. After baked - soak up excess moisture with paper towels before combining with chicken.

+ 3 large chicken breasts
(Cook in a skillet & chop into small pieces)

+ Sauté cherry tomatoes in a skillet with avocado oil @chosenfoods

Combine chicken, spaghetti squash and pesto together and bake at 400° for ten minutes. Top with cherry tomatoes and fresh basil. Enjoy!
