Paleo Pumpkin Donuts

Ingredients:

+ 2 eggs
+ 1/4 cup organic canned pumpkin
+ 1 cup almond flour
+ 3-4 tbs maple syrup
+ 1/4 tsp baking soda or 1 tsp baking powder
+ 1 tsp vanilla extract
+ 1 tsp cinnamon
+ 1 tsp mix of: cinnamon, nutmeg, cloves & ginger (aka pumpkin spice)

Instructions:

Preheat the oven to 350°F. Whisk the eggs in a medium sized bowl. Then mix all the ingredients together throughly. Spoon the batter into a ziplock bag, snip the corner and pipe it into the wells of a donut pan. Bake for 20-22 minutes. Allow to cool and remove the donuts from the pan.

Glaze:

1:1 Melted coconut oil and coconut sugar with cinnamon. Dunk the top side of the donut into the wet mix. Then dunk the same side into a dry mix of coconut sugar and cinnamon. Enjoy!
