Healing Chicken Veggie + Rice Soup
Ingredients:
2 32 oz containers of chicken bone broth
2 large chicken breasts, cooked and shredded
2 cups organic white rice, rinsed
10 cloves garlic, minced
1 zucchini, quartered and chopped
3 cups carrots, cut into coins
3 cups green beans, trimmed and chopped
3 ears organic corn, shaved
1 onion, diced
6 red potatoes, diced
2 super chilis, minced
olive oil
1.5 tsp curry powder
1.5 tsp turmeric powder
1.5 tsp ginger powder
1.5 tsp onion powder
1 tsp garlic powder
1/5 tsp paprika
1/5 tsp cayenne
1 tsp sea salt
1.5 tsp pepper
1 tsp dried basil
1 tsp dired thyme
1 tsp dried oregano
Instrcutions:
Wash and prepare the vegetables.
Rinse and cook the rice according to package, set aside.
Cook the chicken breasts in ~1 cup water or broth in the Instant Pot for about 12-15 minutes or until cooked through. Shred the chicken and set aside.
Sauté the onion, garlic, and carrots in a large soup pot with olive oil for 2-3 minutes.
Add all other ingredients including the rice and chicken and stir to combine.
Cover and simmer until potatoes are cooked through and fork tender.
Top with fresh herbs and enjoy!
