Quick Pickled Onions

Ingredients:

+ 3 small red onions

+ 2 cups white vinegar

+ 2 cups filtered water

+ 1/4 cup sugar

+ 2 tbs sea salt

+ peppercorns

Instructions:

Using a mandoline slicer- thinly slice the red onions and fill the jars 90% full. Set aside.

In a medium saucepan combine all other ingredients, stirring to dissolve the salt and sugar. Bring to a boil and remove from heat.

Pour the vinegar mixture over the onions filling the jars until the onions are fully submerged. Let cool. Allow to marinate for at least an hour.

Store in the refrigerator for up to two weeks.
