Mustard Sardine Salad

1 can boneless skinless wild-caught sardines 

1/4 small sweet onion 

1 stalk celery

1 tbs avocado oil mayonnaise

1 tbs yellow mustard

Juice of 1/2 a lemon

Fresh parsley to taste

1/4 tsp sea salt

Black pepper to taste

Drizzle of olive oil

Drain the sardines and mash them in a medium sized bowl. Dice the onion and celery and add them to the bowl. Mix in the mayonnaise, mustard, lemon juice, parsley, sea salt and pepper until well combined. Drizzle with olive oil and top with more parsley!

Enjoy alone, over greens, in a lettuce wrap, on crackers or with fresh veggies!
