Paleo Molasses Cookies
+ 2 tbs softened coconut oil
+ ¼ cup molasses
+ ⅓ cup almond butter
+ ½ cup coconut sugar
+ 2 flax eggs: 2 tbs flax meal & 5 tbs water. Whisk together and let sit until it gels.
+ 1 tsp vanilla extract
+ 1 tsp cinnamon
+ 1 tsp ground ginger
+ ½ tsp baking soda
+ ½ tsp mineral salt
+ ¼ tsp ground nutmeg
+ ½ cup coconut flour
Powder mixture:
+ ⅓ cup coconut sugar
+ ¼ tsp ground ginger
+ ¼ tsp cinnamon
Preheat oven to 350°. Mix all wet ingredients together. Mix in dry ingredients. Form into 12 medium sized cookie dough balls. Coat them with the powder mixture. Bake for 12 minutes and let cool. Enjoy! 💗
