GF Peanut Butter Dark Chocolate Bars

Ingredients:

Peanut butter base:

  • 1 1/4 cups natural creamy peanut butter

  • 2/3 cup coconut flour

  • 1/2 cup maple syrup

  • 1 tsp vanilla extract

  • 1/4 tsp sea salt

Chocolate topping layer:

  • 7 tbs natural peanut butter, melted 

  • 1 1/4 cups dark chocolate chips, melted

Instructions:

In a large mixing bowl, mix together the peanut butter, vanilla extract, maple syrup and salt. Next, mix in the coconut flour. Press the dough into a parchment lined dish in an even layer. (I like an 11 cup Pyrex dish- it’s 8x10in) Then, melt and mix the chocolate chips and peanut butter together in a medium bowl. Evenly pour the mixture over the base layer. Cover the container and place in the freezer until firm. Remove from freezer and slice into bars or bite sized squares. Enjoy!
