Pumpkin-Acorn Squash Soup

(AIP, Paleo, Whole30, DF, GF)

It’s finally feeling like autumn here in Michigan- so what better than a delicious soup!?

All you need is:
+ 1 acorn squash
+ 1 can pumpkin
+ 3 cups chicken bone broth
+ 1/2 cup coconut milk
+ 2 tbs coconut oil @chosenfoods
+ 1/4 tsp cinnamon @simplyorganicfoods
+ 1/4 tsp ginger
+ 1/2 tbs turmeric @navitasorganics
+ 1/4 tsp garlic
+ mineral salt @redmondrealsalt

Optionally add a sweetener if you like- apple works!

Directions:
Slice an acorn squash lengthwise, remove seeds, coat with coconut oil & place face down on a lined baking sheet. Roast for 50 minutes at 425° or until fork tender. Scoop out squash and blend in a blender. Mix the rest of the ingredients in a large pot, add blended squash and combine thoroughly. Heat through, top with cinnamon & serve! Enjoy! ❤️
