Non Traditional White Chicken Chili in the Instant Pot
Ingredients:
1/2 quart chicken bone broth
12 skinless boneless chicken thighs
3 yellow onions diced
1-2 cups baby carrots diced
1 can black beans
2 cans kidney beans
1 can diced tomatoes
2 tbs grass-fed butter
1 tbs chicken bouillon paste
1 Siete mild taco seasoning packet
1 tsp garlic powder
1 tsp paprika
Red chili flakes
Parsley
Real salt
Black pepper
8oz cream cheese, softened
Sour cream
Instructions:
In the Instant Pot, sauté the diced onions & carrots with butter until the onions are translucent.
Add the chicken bouillon paste and mix.
Mix in the Siete seasoning, garlic powder, paprika, salt & pepper.
Add the chicken thighs.
Drain and add the diced tomatoes & beans.
Pour in the chicken bone broth.
Pressure cook for 45 minutes.
Set out a brick of cream cheese to soften.
Carefully release the pressure when finished cooking.
Remove the chicken thighs & shred them with two forks.
Add the chicken back in & mix.
Cut the cream cheese into cubes and add it to the pot. Mix well.
Serve with sour cream and top with parsley, red chili flakes & pepper.
