Gluten Free Beef Meatballs

Ingredients:

2 lbs grass-fed ground beef

2 pastured eggs, whisked

1/2 cup gluten free breadcrumbs

1/2 cup parmesan cheese, grated

1 cup yellow onion, diced

4 tsp garlic, minced

1/2 tsp garlic powder

1/2 tsp dried oregano

1/2 tsp dried parsley

1 tsp sea salt

1 tsp black pepper

28 Oz RAO’s Homemade Marinara Sauce

Olive oil

Instructions:

Dice the onion and mince the garlic.

Whisk the eggs and set aside.

In a large bowl throughly combine the beef, 2 whisked eggs, gluten free breadcrumbs, parmesan cheese, 1/2 cup diced onion, 2 tsp minced garlic, garlic powder, oregano, parsley, salt and pepper. Set aside.

Preheat the oven to 400°F

Form meatballs into 1 1/2 inch balls. Place on a large stainless rimmed baking sheet.

Bake for 20 minutes.

In a large sauce pan sauté 1/2 cup diced onion and 2 tsp minced garlic in olive oil until fragrant. Add the marinara sauce. Simmer on low.

Once finished baking, add the meatballs to the simmering sauce. Simmer 10 minutes.

Enjoy over pasta or as is topped with parmesan and oregano!
