Healthier Reese’s Eggs

I LOVED Reese’s Eggs growing up and miss them. But, I don’t miss all the icky artificial ingredients, vegetable oils, etc. πŸ™ƒ So, I wanted to create my own healthier alternative that is free of gluten, dairy, soy and is super easy to make! Perfect for Easter! πŸ˜


Ingredients:

Peanut butter dough:

  • 1/2 cup creamy peanut butter

  • 3 tbs maple syrup

  • 2 tbs melted coconut oil

  • 1/2 tsp vanilla extract

  • 6 tbs coconut flour (can substitute for about 10 tbs of almond flour)

  • 1/4-1/2 tsp sea salt (if peanut butter is unsalted)

Chocolate coating:

  • 1 tbs melted coconut oil

  • 1/2 cup dairy-free chocolate chips


Instructions:

Melt 2 tbs of coconut oil.

In a large bowl, thoroughly mix together the peanut butter, maple syrup, melted coconut oil and vanilla extract. (Add sea salt if peanut butter is unsalted!)

Next, slowly mix in the coconut flour until it is thoroughly incorporated.
 

Roll dough into equally sized balls and flatten/form them into egg shapes. Place on parchment paper on a baking sheet in an even layer.

Place in the freezer for about 15 minutes or until dough is firm.

Chocolate coating:

Melt coconut oil and chocolate chips together, stirring until combined well. (I prefer the double boiler method instead of the microwave.)

Remove peanut butter dough from the freezer and dip them into the melted chocolate using two forks. Lay them back onto the parchment paper covered baking sheet in an even layer.

Place them in the freezer to chill for about 15-20 minutes.

Remove from the freezer and enjoy! πŸ’ž
