Beef Stuffed Bell Peppers
Ingredients:
1 lb grass-fed ground beef
4 bell peppers
1/2 cup blanched almond flour
1 cup sugar free marinara sauce
1 small yellow onion, diced
2 stalks celery, sliced
2 tbs garlic, minced
1 tbs extra virgin olive oil
1 tsp dried oregano
1 tsp paprika
1 tsp ground black pepper
1 tsp sea salt
Topping Ingredients:
- ~1/4 cup avocado mash
- 1 green onion, sliced
- 1/8 red onion, diced
- 1 jalapeño, diced
- fresh cilantro
- 1 cup romaine, shredded
- 1/4 cup sugar free red salsa
- 1 lime
Instructions:
Wash and prepare vegetables.
Preheat the oven to 400°F.
Heat 1 tbs extra virgin olive oil in a skillet over medium heat.
Sauté yellow onion, celery and garlic until translucent and fragrant. (about 2-3 minutes)
Add ground beef and spice mixture. Mix together and brown the beef. (about 3-5 minutes)
Add 1/2 cup marinara sauce and mix well.
Turn off heat.
Add 1/2 cup of almond flour and mix thoroughly. Set aside.
Slice tops off bell peppers, remove seeds, place peppers into a casserole dish open side up and drizzle with olive oil.
Fill bell peppers to the top with beef mixture.
Top the stuffed peppers with ~1/2 cup marinara sauce divided equally among the 4 stuffed peppers.
Bake at 400°F for 35 minutes uncovered.
Add toppings of choice:
- mashed avocado
- sliced green onion
- diced red onion
- diced jalapeño
- fresh cilantro
- shredded romaine
- sugar free red salsa
- squeeze of lime
