Paleo Beef Stew

Ingredients:

2 pounds of stew beef browned in a skillet 2 mins each side

1 Q beef bone broth 

1-2 tsp arrowroot starch

4 oz tomato paste

drizzle of balsamic vinegar 

1-2 tbs apple cider vinegar

sea salt, pepper, garlic powder, onion powder (all to desired amounts)

finely chopped fresh chives, thyme, oregano and parsley

2 sprigs rosemary

1-2 cups chopped baby carrots

1 diced white onion

3 stalks diced celery

1 diced sweet potato

5 sliced patio tomatoes

1 diced super chili pepper

1 small diced jalapeΓ±o

2 tbs diced garlic 

Instructions:

Prepare your vegetables

In a heated cast iron skillet, brown your stew meat on each side for 2-3 minutes

Add browned meat to a slow cooker and sprinkle with arrowroot starch

Add all other ingredients (except rosemary) to the slow cooker and mix together until tomato paste is dispersed throughout the broth

Top with rosemary sprigs 1 hour before finished

Cook on high for 6 hours and serve. (Or in an instant pot for 45 minutes on high pressure.)
